We'll start with my most favorite and work down to my least.
"Funeral Sandwiches' - Sunday Baker
These were GOOD, like SERIOUSLY delicious. I made a mini batch with a 4 pack of the Hawaiian rolls. I made them for lunch for myself one day. I only let them sit and marinade like 5 minutes. Mine were slightly crunchy, but the idea behind the sandwich was there. These were fantastic, and I will for sure be making them again. Only mod I made was using provolone, because it's what I had on hand.
Garlic pesto chicken with tomato cream sauce - Southern Girl Cooking
I was a little iffy about the combination of these two sauces, but they are fantastic. Just the tomato scream sauce alone with the pasta was enough to sell me. When I was a kid, my Mom used to buy the Lipton noodle mix (think butter noodles) and they had one with tiny shells and a creamy tomato sauce. This cream sauce takes me back to that time, and it's SO good!
French Dip crescents w/au jus - Mama Loves Food
Around our parts, you can't get au jus with your deli beef (ala Scala Italian beef in the suburbs of Chi-Town), so I went with a frozen tub of Papa Charlie's Italian beef. Problem solved. I thawed in the fridge over night and simply took a long strip of beef for each crescent. I was down to scraps for the last two, so I just made cheesy rolls out of those. These were not a hit with our kids. Bubber, that doesn't surprise me, he's not a fan of meat. Sunny did surprise me though, normally she is a fan of these little hand held meals and loves crescent rolls. She ate it, but did not do so happily. Mekius and I however, have a new staple meal. Much less messy than using Turano rolls and make for great dipping (this city girl will never give up her Turano, never fear!)
Spinach gorgonzola pasta - Food.People.Want.
Steak Gorgonzola Alfredo is my favorite dish at Olive Garden and I was hoping this would be similar. My version tasted less than mediocre. The reason why is when I was prepping my ingredients I realized that ONE container of Gorgonzola cheese was only 5 oz. Half of the required amount. That being said, that ONE container cost me almost $5. I am not going to spend $10 on just CHEESE for a recipe. I'll stick to OG on that one. I'm sure it would have been fantastic if I'd had the right amount. It just tasted like ricotta to me (and I cannot stand the taste of ricotta).
Bacon Ranch foil packet potatoes - Cassie Craves
We did these on the grill. Phenomenal. We skipped the powdered ranch and did as directed then topped with ranch salad dressing (liquid). So good. Complimented our grilled meal very nicely :)
Pizza casserole - Cully's Kitchen
This gave me the worst heartburn ever, very greasy too. Did not like :/
Easy Garlic Chicken - Food
This had real potential, but for me the flavor fell flat and the sauce was very watery.
So that's a bit of what I've cooked up the past couple of weeks. Tomorrow night I am taking this on.
